Patriotic Strawberries

Ingredients
  • 1 lb fresh strawberries, rinsed and patted dry
  • 1 pint of fresh blueberries, rinsed and patted dry
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • graham cracker crumbs, optional
Directions
  1. Using a small melon baller, cut out the strawberry stem and slightly hollow out the inside of the berry. Cut off a small part of the pointy tip of the strawberry so that the berry can stand. Put them all on a large baking sheet.
  2. In a medium bowl, with either a standing or hand held mixer, beat the cream cheese, sugar, and vanilla on medium speed for about 2 minutes or until fluffy. Place the mixture in a pastry bag (or large ziploc bag with a small corner snipped off) and pipe into each strawberry, adding a little extra filling on top. Place one blueberry on the top of each strawberry, nestling it gently into the filling.
  3. Refrigerate until thoroughly chilled. Lastly, sprinkle each berry treat with graham cracker crumbs, if desired.
